Thịt bò thái lát nhỏ. Cho thịt bò, bột bắp (chừa lại 2 muỗng cà phê) rượu Thiệu Hưng và muối vào 1 cái bát lớn. Nhẹ nhàng trộn đều bằng tay, ướp ở nhiệt độ phòng trong 10-15 phút. Trộn hắc xì dầu, nước tương, nước dùng gà, 2 muỗng cà phê bột bắp trong 1 cái bát vừa để làm sốt. Hành cắt khúc khoảng 5cm, gừng và tỏi băm nhỏ.
Đun nóng dầu trong chảo. Cho thịt bò xào, để yên trong khoảng 1 phút, đảo mặt còn lại, tiếp tục để yên trong khoảng 1 phút rồi trút ra dĩa để riêng. Nếu còn nhiều dầu trong chảo, sử dụng một vài lớp khăn giấy để thấm bớt dầu ra, chỉ để lại 1 muỗng canh dầu trong chảo. Thêm gừng, tỏi băm và phần đầu trắng của hành lá vào chảo. Xào 30 giây cho đến khi thơm.
Khuấy nước sốt một lần nữa cho đến khi bột bắp tan hoàn toàn. Đổ vào chảo và ngay lập dùng vá đảo đều. Nước sốt sẽ sôi lên rất nhanh, chỉ trong vài giây. Cho hành boa rô vào xào cùng. Đảo đều 1 lần nữa rồi tắt bếp.
Cho ra dĩa dùng nóng với cơm trắng sẽ rất hao cơm đấy nhé!
