Sò lông ngâm với nước, bỏ một vài chiếc muỗng hoặc nĩa inox để sò nhanh nhả cát hơn. Sau khi ngâm khoảng 30 phút thì đem sò lông đi rửa sạch. Đun một nồi nước sôi, cho sò lông vào luộc khoảng 30 giây để thịt sò hơi chín và dễ tróc khỏi vỏ hơn. Vớt sò ra ngoài, tách bỏ phần vỏ phía trên.
1 quả xoài bạn lấy 1 ít đem cắt hạt lựu nhỏ cỡ đầu đũa, còn lại đem cắt miếng. Cho những miếng xoài vừa cắt vào cối xay sinh tố, thêm 1 muỗng canh đường và 1/4 muỗng cà phê muối, rót vào 1 chén nước khoảng 100ml rồi xay xoài cho nhuyễn mịn.
Bắc lên bếp một chiếc nồi nhỏ, cho sốt xoài vừa xay vào nồi đun sôi lăn tăn, đến khi sốt sánh dẻo lại thì tắt bếp.
Chuẩn bị sốt xong bạn cho sò lông lên vĩ nướng, rưới mỡ hành (30gr hành lá + 50ml dầu sôi) lên trên, thêm hạt điều đập vụn và xoài cắt hạt lựu rồi nướng. Nhiệt độ nóng sẽ làm mỡ hành sôi lên mang đến mùi thơm rất cuốn hút.
Nướng sò xong rồi thì dọn ra ăn thôi. Những con sò lông giòn dai, thịt ngọt kết hợp với hạt điều bùi bùi, xoài chín cùng sốt xoài chua chua ngọt ngọt, hấp dẫn vô cùng. Món này mà chiêu đãi bạn bè vào những bữa tiệc BBQ cuối tuần chắc chắn sẽ hao bia lắm đấy.
